SHARK CATFISH RECIPE

The cuisine of interest with mangutnya is the shark catfish as a menu of popular culinary in Yogyakarta. Catfish is one of the variations of this type of fish cooked with herbs bad for good Fried Catfish and shark was also grilled or smoked catfish so mind it feels will be different as well.

Ingredients and seasoning the fish: shark

1 kg Catfish
1 piece of lime
2 pieces Lemongrass digeprek
3 cm galangal digeprek
3 cm ginger
2 pieces of bay leaf
2 pieces of Orange leaves
1 big red chilies cut into pieces of 2 cm
1 tbsp brown sugar
1 packet (65 ml) coconut milk kara
500 ml water
1 tsp salt or to taste
1/2 tsp bouillon powder or flavoring
cooking oil

Puree:

6 grains of red onion
3 cloves garlic
5 roasted hazelnut grains
1 tbsp coriander
1 turmeric finger
2 cm in size kencur
2 pieces of curly red chillies
5 pieces red cayenne pepper

HOW TO MAKE THE SHARK CATFISH:

Clean the inside of the fish and wash it clean then rub with lemon juice for about 15 minutes. Fry the fish until done, drain and then set aside.
Heat a little oil and then Saute seasoning smooth, bay leaf, Lemongrass, ginger, red chilies, galangal and lime leaves until aromatic. Pour the water and stir in the salt, bouillon powder and brown sugar, mix well.
Pour the coconut milk and stir-stir in order not to break the coconut milk, boiling after enter the already Fried Catfish. Stir and then simmer about 5 minutes until the spices soak up, turn off the heat and is ready to be served.
